Meet Chef Hej Hej

a.k.a Amelia Eudailey

Amelia has been hosting friends and sharing Swedish food traditions with those around her since she can remember. While she grew up in the States, she regularly visited Sweden and has fond memories of eating strawberries with milk on the porch during Midsommar and waking up craving slices of crispbread layered with cheese and butter for breakfast. Amelia wouldn’t be Swedish without having an obsession with candy, and she regularly requires at minimum two pounds of the godis to come home with her on every trip. 

After moving to San Francisco from Denver, CO in 2020, Amelia immediately became enamored with the food scene. While most of Amelia’s experience is self-taught, she has also worked as a line cook at the acclaimed restaurant Octavia. Here she had the privilege of working with the freshest farm produce and learned unique fermentation techniques in addition to fundamentals in food prep and storage, cooking at scale, and running a service.

With her enhanced skillset and passion for Swedish cuisine, Chef Hej Hej was born!
